  • In a pan, dissolve sugar in water and bring to a boil to make a sugar syrup with one-string consistency.
  • Add the cashew powder to the syrup and mix well, ensuring no lumps.
  • Cook the mixture on low heat, stirring constantly, until it forms a dough-like consistency and starts leaving the sides of the pan.
  • Transfer the dough to a greased plate and knead lightly when cool enough to handle.
  • Roll the dough out evenly using a rolling pin and cut into diamond shapes.
  • Garnish with silver leaf if desired and let it set before serving.
Creamy Cashew Curry

Creamy Cashew Curry

Ingredients

  • 1 cup raw cashews
  • 2 tbsp oil
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 1 tsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 1 cup coconut milk
  • Salt to taste
  • Fresh cilantro for garnish

  • Soak cashews in warm water for 15 minutes, then grind into a smooth paste.
  • Heat oil in a pan and sauté onions until golden brown.
  • Add ginger-garlic paste and cook for a minute.
  • Add tomato puree, turmeric, and garam masala. Cook until the oil separates.
  • Stir in cashew paste and coconut milk, then simmer for 5 minutes.
  • Season with salt, garnish with cilantro, and serve hot.
