Kaju Katli
Ingredients
- 1 cup cashew powder (finely ground cashews)

- Grind cashews into a fine powder without over-processing.
- In a pan, dissolve sugar in water and bring to a boil to make a sugar syrup with one-string consistency.
- Add the cashew powder to the syrup and mix well, ensuring no lumps.
- Cook the mixture on low heat, stirring constantly, until it forms a dough-like consistency and starts leaving the sides of the pan.
- Transfer the dough to a greased plate and knead lightly when cool enough to handle.
- Roll the dough out evenly using a rolling pin and cut into diamond shapes.
- Garnish with silver leaf if desired and let it set before serving.
Creamy Cashew Curry
Ingredients
- 1 cup raw cashews
- 2 tbsp oil
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 1 tsp ginger-garlic paste
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- 1 cup coconut milk
- Salt to taste
- Fresh cilantro for garnish

- Soak cashews in warm water for 15 minutes, then grind into a smooth paste.
- Heat oil in a pan and sauté onions until golden brown.
- Add ginger-garlic paste and cook for a minute.
- Add tomato puree, turmeric, and garam masala. Cook until the oil separates.
- Stir in cashew paste and coconut milk, then simmer for 5 minutes.
- Season with salt, garnish with cilantro, and serve hot.
Spiced Cashew Trail Mix
Ingredients
- 2 cups raw cashews
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin powder
- 1/2 tsp garlic powder
- Salt to taste

Cashew Energy Balls
Ingredients
- 1 cup raw cashews
- 1 cup pitted dates
- 1/4 cup shredded coconut
